"Eat, drink and love...the rest is not worth a nickel " - Lord Byron

Date night + pandemic = at-home date night. Sadly, or luckily, depending on how you look at it...Neil and I are introverts, so our Friday nights usually consist of charcuterie, drinks and games. Throw in a movie or two and we're set. Recently I wrote about the charcuterie I make and so now on to the drinks!

My son-in-law come up the perfect name...Friday Night Lights Out. They are powerful. They are pure liquor. They are delicious. And for my warning...Limit these to two a piece and don't drink and drive.

I love liqueurs; alone or with mixers. I like trying new ones too, so needless to say my liquor cabinet is filled with liqueurs. So the recipe I'm showing here is one I've used before and know it works, but I could literally do a new Friday Night Lights Out every week.

Raiding my cabinet I found Jim Beam Vanilla, Disaronno Amaretto, and Bailey's Irish Cream. These drinks couldn't be easier. Some of my favorites I've used in the past are American Honey, Galliano and Rum Chata. As for the hard liquor, use one that you would be willing to drink on the rocks. If you don't like it on the rocks, I can guarantee that you won't like it in this drink. I love Jim Beam Honey, Jim Beam Vanilla, Ol' Smokey Moonshine, even Bicardi dark rum.

I imagine myself as Tom Cruise in Bartender and like to add flare to my drinks. So I, not so gracefully, add Hershey's Syrup to the glasses. Finally, I add ice and pour in the delicious concoction! Drink and enjoy. Now it's off to cheese, crackers, drinks and Yahtzee. A great night.

Friday Night Lights Out For Two

Ingredients

  • 2 oz Disaronno Amaretto

  • 2 oz Baily's Irish Cream

    • 2 oz Jim Beam Vanilla

    • Ice Cream Sauce: Chocolate or caramel syrup for example

    • Ice

Directions

  1. Combine the first three ingredients into a cocktail shaker filled with ice.

  2. Place the lid on the top of the shaker and shake like you mean it.

  3. Decorate your serving glasses with ice cream syrup and add ice.

  4. Pour that delicious nectar into your fancy glass and enjoy.

Note: This recipe is for two. It is easy to make for one or large gatherings. Just plan accordingly. And drink responsibly!
